OK… This sounds really odd, BUT it’s really, really good!  I tried it for the first time on Super Bowl Sunday at my brother and sister-in-law’s house.  They are big Cross Fit-ers who just finished a New Year’s challenge of eating Paleo for a month and had some new recipes to share.  This is one of the items I sampled.  I only had a smallish portion because we had so many other things to eat.  So, I decided to try it at home.  It’s so simple (only 6 ingredients) and so yummy!

TIP: You do need to set aside time to make the spaghetti squash ahead of time.  I made mine in the morning while getting the girls ready for school so it would be ready to go later.  Then late that afternoon/early evening I chopped the onions and cooked them with the sausage, mixed all the ingredients and put it in the oven at 5:15 to cook while I did some carpools to and from various activities around town.  I came home at 6:15, took out the pan to sit and firm up while I roasted some broccoli for 20 minutes.  VOILA dinner ready to go!
