Happy Summer! It’s officially summer at our house with school finally ending Wednesday. As is fairly common with summer fun and activities, I’m not going to be cooking much this coming week.
Friday – Sunday: I’m participating in the MS Ride this weekend. I’ve been riding my bike a lot of miles over the past few months in preparation to ride two back to back 75 mile days traveling from UMass Boston to Provincetown on Saturday and Sunday. The weather looks great and I’m sure I’ll have a lot of fun, BUT I have discovered that I don’t love being on my bike so often and for so many miles. I’m looking forward to returning to my 1-2 times per week for 1-2 hours. 🙂
Tuesday: While I typically think of the slow cooker as something for colder weather, I realized I wouldn’t be around much at meal time to cook something. I’ll be dashing out the door for a training session at HYP Studio as the husband zips in from work in time to be home with the girls. I saw this new recipe I had pinned on my “Recipes I’d Like to Try” board for Crock Pot Chicken w/ Spaghetti and thought we would try it out. I’ll have mine over wilted greens and the rest of the family will be having it with gluten free pasta.
Wednesday: My 9 yo will be going to the beach in the North Shore with friends for a birthday party for most of the day and the husband is planning to play soccer Wednesday nights for the summer after work. So, I think I’ll take my 12yo and maybe a friend for an outing. Maybe a trip to the beach? Maybe into Boston? We’ll see what the weather is like when the day is closer. I’ll leave dinner up in the air and see how the day goes. If we don’t go out, I’ll fall back on one of my favorite easy “Go-To” dinners.
Thursday: We are headed out of town through Sunday with another family to celebrate the Fourth of July. I’m sure there will be barbecues and a meal or two out.
