I returned late yesterday afternoon from a fun 3-day trip to Miami with a couple of girlfriends. Meals on the trip were somewhat complicated because I’m finishing up week 3 of the 4-week Paleo Challenge I’m facilitating and participating in at Reebok CrossFit Medfield. The contemplative photo of me captures me giving serious consideration to my dining options at a roof deck bar we went to on our last night.
Arriving late yesterday has thrown off my normal weekly shopping routine. I finished up my meal plan and grocery list this morning and I’m headed to the store after watching my 13yo’s soccer game. I really don’t like shopping on the weekend. It makes an already over-scheduled couple of days that much more challenging to fit everything in. Oh well… Off I go!

Last night I enjoyed a egg and spinach scramble before dashing out the door to see the show. Tonight the whole family is going and plan to go out to an early dinner beforehand.
see Sunday: Sweet Potato, Chicken & Kale Soup The husband is going to a Patriot’s game. The girls and I will be holding down the fort on our own. I’m envisioning a relaxing Sunday afternoon. Movie on the couch???
see Monday: Sweet Potato Crustless Quiche I don’t have a recipe for this to give you *yet*. A fellow CrossFitter and Paleo Challenge participant gave me this great idea last week. Very thinly sliced sweet potatoes layered on the bottom of baking pan (the crust), she suggested then layering crumbled sausage, but I’m going to add sautéed sweet bell peppers and onions instead, topped with eggs – then bake. I’ll report back with a recipe if all goes well. Cross your fingers! 😉
Tuesday: Chicken BLT Lettuce Cups I have some bacon in the freezer from my monthly meat delivery AND Tuesdays are our most hectic evening. So, I thought these would be quick and easy to whip up. I’ll have my chicken and bacon on a salad to skip the mayo due to the Paleo challenge.
Wednesday: Chicken, Tomatoes, Roasted Red Peppers & Capers I can’t locate the actual recipe on line. The link will take you to the recipe I typed in my weekly meal plan when I made this before. It goes well over wilted greens or brown rice.
Thursday: Out to dinner with a group of running club girlfriends!
I’ll definitely be making another batch of Raw Brownie Bites which have been a savior to me during this challenge. I actually brought a batch to Miami with me so I would have a treat. 😉
