This will be a busy, busy weekend packed with a Middle School Semi-Formal, town tree lighting and holiday craft fair stroll, two 5ks (one I’m running with my feet and one I’m running/organizing), afternoon in Boston with the girls checking out the holiday lights, chocolate buffet with Santa, skating pond, etc., decorating our christmas tree and ending with a 75th birthday dinner celebration for my mother-in-law.  I’m worn out already!  Needless to say I’m doing ZERO cooking this weekend.

BUT after the weekend whirlwind this is what I have planned:

MondayTuscan Pork with Chickpeas & Spinach served with brown rice and baked acorn squash.  This was on deck for last Wednesday, but the husband had a last minute work dinner.

Tuesday: White & Green Turkey Chili with Pamela’s GF Corn Muffins and green beans

Wednesday: Slow Cooker Steak Fajitas

Thursday: Left over night!

I’m also making Sweet Potato, Chicken & Kale Soup (Paleo) to deliver to a friend who had surgery last week.
