OK… I know this sounds odd, but it was REALLY good!  How did this creation come about? I was serving tacos for the family last week, but I didn’t want to have the taco shell, cheese, sour cream, etc. Originally I was planning on making mine into a taco salad. I had decided to also make some mashed cauliflower as a side because I thought you don’t really get a full serving of veggies by tossing a few pieces of lettuce and tomatoes on top of a taco.  So, there I was looking at all the options and decided a big bowl of mashed cauliflower with the seasoned ground beef on top was worth trying.  Is this similar to how combinations like peanut butter and jelly came about?  Probably not, but this is a pairing I will serve again in the future.

Cauliflower Mash Ingredients:
2 heads of cauliflower (so I have enough for leftovers)
1 TBS butter
1/2 tsp garlic salt
Pepper to taste

Taco Seasoned Ground Beef:
1 lb grass fed ground beef (Local? Sign for monthly delivery from Walden Local Meat)
Homemade taco seasoning (mix 1 tsp chili powder, 1/2 tsp oregano, 1/2 tsp cumin, 1/2 tsp salt)

Directions:

  1. Place ground beef in skillet over medium heat, pour seasoning mixture over the top.  Stir and crumble beef with spoon periodically while cooking.  Cook until meat is no longer pink.
  2. While beef is cooking (or before) cut florets from the heads of cauliflower, place in a microwaveable container with an inch of water.  Microwave for 5-8 minutes until cauliflower is tender.
  3. Place cooked cauliflower in a blender with butter, garlic salt and pepper and mash.
  4. To serve place cauliflower mash on plate or in bowl and top with seasoned ground beef.  I like it all mixed up, but you decide!
