Looks like I’m doing a lot of cooking next week!  I’m trying out three new recipes plus two I’ve made before.

I’m actually cooking on a Friday night which is a rarity.  I have some shrimp in the freezer I’d like to use and I’d rather not have Friday night pizza.  So, I may be eating it on my own, but thankfully I love leftovers!

Friday: Roasted Shrimp w/ White Beans & Feta (NEW RECIPE) over wilted spinach

Saturday: The husband and I are going out to dinner with some friends.

Sunday: Slow Cooker Apple Cinnamon Pork Loin (NEW RECIPE), roasted potatoes and roasted carrots. Classic Sunday kind of meal.

MondaySlow Cooker Mexican Quinoa (NEW RECIPE) You may recall seeing this on the plan last week, but it got pushed out to this week.

Tuesday: Asian Lettuce Wraps Such a quick and simple mid-week dinner.  It can also easily be eaten in separate shifts if necessary.

Wednesday: I’ll be out for dinner.  The husband and girls will be fending for themselves. 😉 In all honesty, they probably prefer it that way sometimes.

Thursday: Black Bean & Sweet Potato Soup This is usually leftover night, but given I’m out Wednesday and not cooking I thought I would make some soup. Another great opportunity for leftovers! It’s always great to have some soup in the freezer you can defrost for lunch.
