Tonight I made a version of a taco salad I saw on a friend’s FB page recently. I thought it sounded simple, healthy and delicious and it was! This is an excellent recipe for a busy night. It took me less than 15 minutes to prepare. Love that!

I made a few changes and this is my recipe:

Salad Ingredients:
1-2 heads of romaine lettuce chopped
1-2 cups of diced tomatoes
1 small bag of broccoli slaw
2 lbs ground turkey
Homemade taco seasoning (2 tsp chili powder, 1 tsp cumin, 1 tsp oregano)
Optional: Shredded cheese, crumbled multi-grain or corn chips (We like Food Should Taste Good brand)

Dressing:
1 cup salsa (We like Green Mountain Gringo brand)
1/2 cup of greek yogurt

Directions:

  1. Add ground turkey and homemade taco seasoning to sauté pan and cook over medium heat until meat is no longer pink and crumbly.
  2. While the meat is cooking chop lettuce and tomatoes.
  3. Mix salsa and yogurt together for dressing.
  4. Create a big salad with the ingredients of your choice!
