Tonight I made a version of a taco salad I saw on a friend’s FB page recently. I thought it sounded simple, healthy and delicious and it was! This is an excellent recipe for a busy night. It took me less than 15 minutes to prepare. Love that!
I made a few changes and this is my recipe:
1-2 heads of romaine lettuce chopped
1-2 cups of diced tomatoes
1 small bag of broccoli slaw
2 lbs ground turkey
Homemade taco seasoning (2 tsp chili powder, 1 tsp cumin, 1 tsp oregano)
Optional: Shredded cheese, crumbled multi-grain or corn chips (We like Food Should Taste Good brand)
1 cup salsa (We like Green Mountain Gringo brand)
1/2 cup of greek yogurt
- Add ground turkey and homemade taco seasoning to sauté pan and cook over medium heat until meat is no longer pink and crumbly.
- While the meat is cooking chop lettuce and tomatoes.
- Mix salsa and yogurt together for dressing.
- Create a big salad with the ingredients of your choice!
