Tonight I made Oven-Baked Fajitas. I’ve made this recipe a few times before and we all enjoy it. Tonight I applied a strategy to make this recipe and meal time even easier I wanted to share with you. We all know mid-week evenings can get tricky with activities and homework.  Any opportunity to make things less complicated and have a healthy dinner I welcome!

Rather than assembling all the items at 5:30 when I got home, I put all the ingredients in a big ziplock bag in the morning. When I got home I simply poured the contents of the bag into a baking dish and dinner was ready in 30 minutes! We were all seated at the table by 6:15. Awesome!
