Just finishing up a fun weekend in VT. The skiing was great yesterday. As usual conditions exceeded my expectations given there hasn’t been a lot of snow and the temps have been all over the place. Gotta love that Okemo Mountain operations crew!
After taking Saturday off, I’m back on my Macros plan today. Last Thursday I learned that my first month on the plan was a success. In four weeks I gained a pound of muscle and lost almost 2.5% body fat. YIPPEE!
Here’s what I’ll be making this week:
Grilled Chicken & Roasted Sweet Potatoes over Arugula (PALEO): Pretty simple dinner to prepare after arriving home from a weekend in VT.
Slow Cooker Chili (PALEO): I’m winging this one without a recipe. I’m going to use a pound of ground beef, cubed sweet potatoes, canned diced roasted tomatoes, red peppers, onion, tomato paste, chili powder and cumin. If it yields recipe worthy results, I’ll post it next week.
