We kicked the weekend off with a celebration of the 4th year anniversary Reebok CrossFit Medfield (RCFM). I joined the CrossFit world at RCFM in June 2014. What a fun experience it’s been! I’m still challenged every time I walk in the door and there are a million more things I can learn or improve on. I’m never bored and always motivated. It’s been so fascinating to see what I’ve accomplished since I first walked through the door. Thank you RCFM!

What? The Standard Hotel in the East Village has set up mini yurts in their courtyard available for reservation. They serve a fondue menu which was fun, but not a chocolate option for dessert. Epic fail in my opinion. 😉 It was a great and unique experience especially with the winter storm happening around us.
While in NYC I took Saturday lunch and dinner off from the Macros plan I started 1/1, BUT I was right back on plan first thing Sunday! We usually go out for brunch before I leave. Instead I made a great breakfast of scrambled eggs with sautéed red peppers and onions over a bed of arugula before heading to the train. Need an explanation of the Macros plan, read this post.
Here is what’s cooking this week:
- 6oz Grassfed Burger over greens topped with Green Mountain Gringo salsa (PALEO). The rest of the family will enjoy their burger on english muffins with a salad on the side.
- Apple Chicken Salad – The recipe I’m using is from Bob Harper’s “Jumpstart to Skinny” book. You can find the recipe on this link about mid-way down the page if you scroll. I’m excluding the zucchini and dill to increase the odds of the family enjoying it. I’ll offer pita pockets for the family and I’ll have mind over arugula.
- Lemon Chicken & Spaghetti Squash (PALEO)
- Asian Lettuce Wraps
- Bruschetta Baked Shrimp (Modify to Paleo by excluding the Panko and butter mix topping) served with an Arugula Salad. I’m actually going to modify this with chicken rather than shrimp. I purchased the shrimp and other ingredients prior to asking my friend who is coming over if she has any allergies. Apparently she’s allergic to shell fish. BUMMER!
