This weekend we enjoyed the remaining days of February break in VT. Thursday was our first ski day on the slopes and it featured temps in the 60’s. It was great, but the warm temps and some rain Friday morning took quite a toll on the coverage. It’s a bummer to see mother nature wreaking havoc on the hill so early in the season. We all had fun nonetheless! Unfortunately I think we have only one more ski weekend to look forward to due to the girls’ activities ramping up in March and early April. Boo…

Grilled Pork Chops & Roasted Potatoes (PALEO & GF): I don’t have a recipe for this one. I’m simply grilling some pork chops from my monthly Walden Local Meat delivery and roasting a pan of sweet potatoes.
