Last night I made a new recipe that I was looking forward to: Sausage & Kale over Butternut Squash Noodles. The recipe is both Paleo (excluding the parmesan sprinkle noted as optional in the recipe) and Gluten Free. It was a really quick, healthy meal to throw together on a week night. I think it may have taken 20 minutes to get it on the table.
I used pork sweet italian sausage because that’s what I hand in my freezer from my monthly meat delivery from Walden Local Meat. As the recipe mentions, you can easily use other varieties like chicken or turkey. I opted to use spinach rather than kale. I find that spinach cooks down more quickly and my family was more likely to embrace spinach over kale. Kale has a much stronger “green” flavor. I skipped the ground fennel because I didn’t have any and used a 1/2 tsp of ground sage rather than fresh sage. I served mine over butternut squash noodles I purchased at Whole Foods, but you can use any kind of veggie noodle and I also made thin egg noodles for the family.
