Tonight I tried a new recipe for Taco Stuffed Sweet Potatoes inspired by this one from PaleOmg. Of courseI was intrigued by the recipe because it involved sweet potato – my absolute fave food. I had to modify it quite a bit because I don’t have an Instant Pot. I know they are the rage of the moment, but I haven’t felt inspired to learn how to use one to be honest.
*Gluten Free & PALEO
1 lb. ground turkey or beef
Half of a yellow onion, diced
Half of a sweet red pepper, diced
1/2 TBS olive oil
Homemade mexican seasoning (2 tsp chili powder, 1 tsp cumin, 1 tsp oregano)
2-3 baked sweet potatoes
- Bake 2-3 sweet potatoes at 400 for 30-45 minutes (depending on size of potatoes) until softened. TIP: I place some aluminum foil underneath the oven rack where the potatoes are placed to avoid them dripping onto the bottom of the oven when they are near done.
- While the potatoes are baking sauté the onion and peppers in the olive oil in a large skillet over medium heat until vegetables begin to soften.
- Add the ground meat and seasoning, mixing and breaking the meat apart as it cooks until no longer pink.
- When the potatoes are done split down the middle and top with the meat mixture.
