TGIF! Friday is my favorite day of the week. No work, no appointments, etc. Instead I go grocery shopping and restock the dwindled supplies in the pantry and refrigerator, take care of any other errands (like stock up on sunscreen for my vacation next week), get my nails done and occasionally meet a friend for lunch. I also look forward to enjoying dinner and an adult beverage (or two…) with the husband and often friends without tracking macros and calories. AND I can stay up past 9:30-10 if I want to because I’m not getting up at 5AM the next day. It’s a good day!
This Friday I am actually having some good friends over that I have met over the years through running. Due to an injury I sustained back in October (right proximal hamstring tear) I haven’t seen them as much as I’d like to over the last 6 months since I’ve been unable to run. I can squeak out something more like a shuffle on the treadmill, but nothing I would subject anyone else to enduring along with me. In addition, I’m not going to see them much as of the first week in May either because I’m getting my hamstring re-attached to my pelvic bone and will be trapped at home for about 2 months recovering. Ugh… I’ve coined the get together tonight a “Pre-Op” party. I’m trying to stay as upbeat as I can about this whole thing.
I asked my friends to bring an appetizer or dessert. This is what I’m making:
*Sweet Potato Nachos (Baked Sweet Potato Chips topped with Green Mountain Gringo Salsa, black beans and mexican blend cheese) – GF. I’ll also have some guacamole for those lucky folks who aren’t allergic to avocado like me to enjoy.
*Mediterranean Seven Layer Dip – GF
Next week features an easy night of grilling plus two new recipes I’m trying:
Sunday Grill Night: Walden Local Meat steak, new potatoes tossed in garlic and olive oil cooked in the grill basket and a spinach salad with carmelized onions, tomatoes and homemade balsamic vinaigrette (1/3 cup olive oil, 3 TBS balsamic vinegar and 1 TBS dijon mustard)
Thai Basil Chicken (Use Liquid Aminos instead of soy sauce for GF and olive or avocado oil rather than peanut for PALEO)
Taco Stuffed Sweet Potatoes – GF & PALEO I don’t have a insta pot so I’ll be modifying this recipe. I will simply bake my sweet potatoes and sauté the meat and vegetable mixture. I’ll use ground turkey rather than ground beef. I’ll also use my homemade taco seasoning (2 teaspoon chili powder and 1 teaspoon each of cumin, oregano, and salt)
Wednesday we will be working through anything leftover in the refrigeration because Thursday we leave for vacation. YAY! Can’t wait! So, clearly I won’t be cooking, BUT don’t forget I haven’t left you high and dry. Check out all the recipes on my site and my Pinterest boards if you need some ideas.
