This post is quite late. Though I’m sure I’m the only one that noticed. Pretty sure no one’s out there keeping track and deeply saddened by the delay. 😉 However, if I’m wrong, I apologize!
I flew down to FL last Wednesday for a couple days to help my parents pack up for their trip North for the summer. My mom flew home with me Friday while my Dad drove with the cats in the car and the motorcycles on a trailer. He arrived from the long drive late Saturday and they finished their journey to VT on Sunday. In addition, my 12 yo had a dance competition Sunday and I facilitated a workshop on the Macro Diet Sunday morning at RCFM. We had a busy weekend+!
I have a few recipes to share for this week, but then unfortunately my weekly posts will become less frequent for a while. I am having surgery on Thursday to repair a partially ruptured hamstring. I will be out of commission for a while. Friends and neighbors will be delivering meals and we will be keeping it as simple as possible around here. The girls may even need to learn to cook – who knows?! I’ll have to see how it all goes and as soon as I can get back to planning and cooking you better believe I will!
In the mean time, why don’t you share some recipes with me? I’d love to have some meals in the queue to try when I’m back in the saddle.
Here’s what I’m making this week:
Chicken Quesadillas: This is a great mid-week evening meal. I purchase a rotisserie chicken, remove the meat and saute with Green Mountain Gringo salsa. You can also add black beans, corn and/or wilted baby spinach. (If you enjoy the mixture without flour tortillas and black beans, this would be PALEO & GF).
White & Green Turkey Chili (GF): I thought this would be a great thing to make so that I could have some leftovers for lunches in the freezer.
