We enjoyed a great few days at home this weekend. The husband and I had dinner Friday evening with only our 12yo. It’s always nice to get one of your children 1-1. As they get older it gives you a chance to have a good chat. Saturday morning the husband and I went on a really long walk and also had the opportunity for a good chat after a typical busy week for him and Saturday night we had dinner with some good friends. Sunday the weather was better than I expected given the forecast a day or two prior. We did a little yard work and then all adjourned to hang by the pool for the afternoon.
Sundays in the summer are typically grill nights. I always have some steaks or ground beef in the freezer from my monthly meat delivery from Walden Local Meat. This week I took out a skirt steak and I had a piece of salmon to throw on too. We also grilled corn and had a spinach salad with tomatoes and carmelized onions. I love carmelized onions! They are so sweet. I got to enjoy some that were left over in my eggs this morning.

Grilled Chicken w/ Spaghetti Squash w/ Roasted Tomatoes, Basil & Motz (GF – not Paleo due to the motz)
Greek Turkey Burgers & Roasted Broccoli (GF – not Paleo due to the feta)
Grill Basket of Shrimp & Sweet Italian Chicken Sausage served over Zoodles (GF & Paleo) – I don’t have a recipe for this. I’m using Applegate Sweet Italian Chicken & Turkey Sausage. I will slice the links into circles and toss those and the shrimp in a grill basket. I have some of my mom’s famous spaghetti sauce in the freezer. I’ll have my shrimp and sausage over zoodles (spiralized zucchini noodles) and some of my mom’s sauce. I’ll make some egg noodles for the rest of my crew. I’ll also grill some asparagus.
That’s all I have mapped out for the week because we are out Thursday and heading to VT Friday.
