What a weekend! We were in VT for a favorite annual event: Hops in the Hills. We like this event so much that three years ago I asked the husband to rebook our 15th anniversary trip to Greece because we accidentally booked it over the weekend of this event. As always, we had a great time with good friends. It was a little rainy at the start, but we timed it perfectly to miss most of the showers. By 3PM it was a perfect afternoon.

There won’t be a lot of cooking happening this week. Last night I went to dinner with some girlfriends and the husband will be away tonight and tomorrow night.

I am looking forward to trying this recipe tonight: BBQ Chicken Foil Packets (GF & PALEO) I think I need to try grill packets more often! *NOTE: For this to be GF and Paleo check the ingredients on the type of BBQ sauce you select.

Shrimp & Zoodles (GF & PALEO): This couldn’t be easier. It’s simply shrimp cooked in Rao’s marinara over zoodles (spiralized zucchini noodles) for me and real noodles for the girls.

Thursday is Farmer’s Market day and the girls and I will get some fish from the fish truck and some fresh veggies.

This weekend the husband and I will be celebrating 18 years of wedded bliss. How is that possible? Look at these youngsters! HA!
