Brrrr… There’s a chill in the air and I’m firing up the ol’ slow cooker to try two new recipes! I really love returning home to the great smell of dinner all ready to go. I’ve tried a lot of recipes over the years in the slow cooker. Admittedly some have turned out better than others, but some have been keepers. Check out some that we’ve enjoyed on my Recipes tab. Slow Cooker Shredded Beef Tacos (PALEO & GF depending on the shell you use): This turned out really well. I excluded the peppers because I wasn’t sure how spicy that would be and my family wouldn’t be keen on that. It was still really flavorful with the other seasonings. Bonus, I also had enough leftover to freeze for another dinner in the future. My family enjoyed the mixture soft taco style. I had mine over broccoli slaw for a little crunch along with 1/4 cup of salsa mixed with 1 TBS of sour cream.

Slow Cooker Asian Chicken Lettuce Wraps (The hoisin and soy sauces are not Paleo and may not be GF depending on brand): This recipe was really tasty. Pretty easy to throw together at lunch time when I was home between coaching classes. Ready to go when we were all home for dinner after a few minutes of final touches.

Sausage, Cannellini & Tomato Ragout (GF): I haven’t made this recipe in so long! Not sure why. I guess it just fell off the radar. Looking forward to it!
