WOW! The count down is on! Just one week until Christmas. We celebrated Colleran family Christmas over the last weekend. Always a good time. We are up to a group of 19 with the growing number of nieces and nephews. My family will be arriving this weekend for a much quieter celebration here at home.
This week I’m focused on eating super healthy and focused with my macros dialed in before the next session of celebration. I’m not experimenting with any new recipes this week. Sticking with the tried and true simple meals that won’t add to the chaos.
Here’s what I’m making:
Baked BBQ Chicken & Roasted Butternut Squash: No official recipe to offer for these. I will toss the chicken lightly in BBQ sauce and bake on a cookie sheet for approximately 30 minutes or until cooked through. The squash will get tossed in olive oil and other seasonings then roasted on a cookie sheet for approximately 30 minutes.
