Happy New Year! We’ve had a great couple of weeks of celebration since I last posted. A nice mix of large family gatherings, smaller family gatherings, time at home and time away. I make a very focused effort on balancing healthy meals and activity with the less healthy festivities that are in abundance this time of year. Yet, I’m always glad and ready when the first of the year comes and I can get back on the healthy train in earnest. Who’s with me?
To that end, here are some meals I’ll be making this week:
Baked Chicken Parmesan: I’ll enjoy mine over wilted spinach and the family will, of course, opt for pasta.
Slow Cooker Beef & Sweet Potato Stew: I plan to exclude the baby potatoes and only use sweet potatoes. I think one type of potato is plenty!
One Pan Roasted Sausage & Veggies: I’m using this recipe as a reference, but won’t follow it exactly. I have some Applegate sweet italian chicken sausage in the freezer I’ll use. For vegetables I think I’ll use broccoli, red pepper and red onion.
Shrimp Thursday will return this week as well. The hub is typically not home for dinner Thursdays leaving the girls and I to enjoy some seafood. Unfortunately he’s not keen on surf – only turf. When the Farmer’s Market is open over the summer we sometimes have scallops, salmon or haddock, but most of the year we enjoy shrimp. I make it a few ways such as Tomato Basil Shrimp or a sheet pan variety with mixed veggies but the girls really enjoy it simply sautéed with Rao’s marinara.
