We returned yesterday afternoon from a fun weekend in VT. Saturday was a wash out, but Sunday was a better than expected ski day. I love Okemo for their ability to turn things around and exceed your expectations!
Sunday morning I went for a great hike. I am really enjoying that this season. Last year I tried out snowshoeing, but I found the snowshoes cumbersome. This year I have been using my yaktrax I used to wear for winter running and I prefer that. It was 0 degrees Sunday morning when I set out, but just like running and unlike skiing, you warm right up as you head up the hill. The mountain is so quiet in the morning. It’s a really peaceful yet active way to start the day.
Returning to that 80% of my 80/20 lifestyle, this is what I’m making for dinner this week:
Paleo Meatloaf (GF): I’m going to refer to this new recipe, but make some adaptations. I plan to use almond flour instead of flaxseed (because I already have some) and use ground turkey rather than beef (that’s what came in my monthly meat delivery from Walden Local Meat).
Baked Chicken & Cauliflower Rice (GF & PALEO): This is a new recipe for me. I think I’ll skip the olives.
Thursday will be shrimp night per usual. Not sure how I will prepare them just yet! 😉 Stay tuned on my @healthyfoodforhecticlives Instagram page!
