I enjoyed a great, but long weekend in NYC. My dear friend and her son both celebrate January birthdays. I had planned to go down Saturday for a short visit, but noticed there was a class within a mile of her home that I wanted to take. So, I headed down Friday afternoon and stayed with her family for both Friday and Saturday and took a 2-day CrossFit Masters course during the day. Her husband treated me to a fabulous home cooked meal Friday night. It’s so nice for me to sit, relax and have someone else do the cooking. 😉 He’s quite a chef! Saturday evening my friend and I left her son and husband home and went to dinner on our own. It was really great to catch up on what’s going on in each other’s lives. Most often when we see each other it’s over a dinner with other people which doesn’t allow us to really dig into the details and catch up. Unfortunately the class went until 4:30 Sunday and I didn’t arrive home until after 10PM last night. So, I’m tired, but I’m glad I got to see her and her little family and take the class.
Now back to reality… This week I’m whipping something out of the freezer for dinner one night, trying a couple new recipes and having the typical shrimp Thursday.
Slow Cooker Shredded Beef Tacos (PALEO & GF depending on the shell you use): This turned out really well when I made it a couple of weeks ago. I excluded the peppers because I wasn’t sure how spicy that would be and my family wouldn’t be keen on that. It was still really flavorful with the other seasonings. The recipe yielded enough to freeze for another time. My family will have it soft taco style. I’ll have mine over broccoli slaw for a little crunch along with 1/4 cup of salsa mixed with 1 TBS of sour cream.
Slow Cooker Pork Roast: This is a new recipe I’m trying. It looks like it would be very flavorful. I’m not sure if I even have corn starch or if it’s necessary. I think I’ll exclude that!
Mediterranean Chicken Meatballs: Another new recipe to try. Looks intriguing!
AND shrimp night Thursday!
