I’m back from vacation and ready to eat some healthy food! Not that I ate a lot of unhealthy food per se while I was away. I guess it’s more that I ate a lot more food than normal AND then there were the cocktails. 😉 I’m so thankful to know I’ve got my macro plan to return to and get me right back on track.

This week three of the four recipes I’m making are recipes I’ve not tried before. The slow simmered meat sauce is my own recipe that I’ve made a bunch of times.

Bacon Roasted Butternut Squash (GF & Paleo): What could be wrong with this recipe?! My photo doesn’t look nearly as intriguing as the one from the recipe link, BUT it was really simple and really good. I put two pans in the oven (one with the squash and one with the bacon) and set the oven to delay start while I was driving to pick up the 12yo from dance. When I got home it was nearly ready. I just flipped squash and bacon around and cooked for another 10 minutes. BOOM!

Slow Simmered Meat Sauce (Paleo & GF): According to the original recipe post for this recipe back in March 2015 I served this over mashed cauliflower and loved it. I don’t recall that, BUT why not, right?! I haven’t made mashed cauliflower in a while. The post said the husband enjoyed it that way too, but I’ll make the rest of the clan some pasta just in case. 😉

Sheet Pan Teriyaki Chicken w/ Vegetables (GF & Paleo depending on what type of teriyaki sauce you use): I’m going use store bought teriyaki sauce rather than making it myself.

Slow Cooker Latin Chicken w/ Black Beans & Sweet Potatoes (GF): This is a new recipe that looks worth trying. I know, I know. It has sweet potatoes so of course I’m intrigued.
