We had a GREAT weekend in VT. The skiing was fabulous with the new snow we got last week. Now we are getting dumped on again tomorrow. I’d rather not deal with more snow here at home, BUT it sure bodes well for extending the ski season into April.
I got back on the macro wagon yesterday after taking Friday night and Saturday off. I’m am so thankful to have finally found the answer to living the 80/20 life after all these years of searching. If you want to learn more, let me know!
Sunday we had breakfast for dinner. So, easy when you are gone for the weekend.

Dirty Cajun Cauliflower Rice & Ground Turkey: I loosely referenced this new recipe tonight. I used ground turkey instead of beef, skipped the andouille sausage and added shredded carrots. I turned out well. It had a little zip which the hub and I enjoyed. The 12yo, not so much… I especially enjoyed it because my serving was 14oz! I love meals that yield a large amount for minimal calories. WIN!
Pesto Chicken & Spaghetti Squash: I don’t have a recipe for this. I’ll bake chicken breasts and the spaghetti squash and mix with pesto.
Shrimp night returns! We were on quite a roll of having shrimp on Thursdays, but much to the dismay of the 12yo we have broken from that tradition for maybe a month now, BUT it looks like we are back on this week. The girls like their shrimp simply sautéed in Rao’s marinara. I’ll make them some pasta and I’ll have mine over wilted spinach or zoodles.
