Happy Monday! We had a fun weekend here at home kicked off with my 15yo Spring semi-formal Friday night. Saturday night we had friends over and I whipped up a not-so-healthy St. Patricks Day meal that included a cheddar guiness dip, Sheppard’s Pie with a colcannon topping, Irish Flag salad (green, white and orange) and my friend brought a Bailey’s Irish Creme cheesecake. All super yummy, but definitely not within my macros! Not to worry, I was back on the macro wagon on Sunday. 😉
Pork Loin w/ Apples & Kale (PALEO & GF): This is a great Sunday dinner. It needs to bake for about an hour and a half. So probably not something you want to plan for a mid-week dinner.
Slow Cooker BBQ Chicken over Cole Slaw (GF): No recipe link for this one. I’ll put chicken breast in the slow cooker with BBQ sauce and I’ll have mine served over homemade coleslaw. The rest of the family will wrap that combo into tortillas soft taco style.
Sweet Potato Tacos (GF): While planning meals for the week I asked my 12yo what we should have and she said we hadn’t had these in a while. So, here they are! Pictured are my daughter’s version while I’ll have the mixture bowl style without cheese and sour cream.
Sausage & Peppers over Zucchini Noodles (Paleo & GF): This is a new recipe I’ll be trying.
The week will end with Thursday shrimp night – details of that TBD!
