Many of my loyal followers are aware that I typically go grocery shopping on Friday. This requires that I look ahead on my calendar at the upcoming week either Thursday evening or Friday morning before I go shopping. I take a look what’s going on with the family schedule Sunday – Thursday nights so I know what meals to plan for based on who’s home, how much time I have to cook, etc. After I have accessed the schedule I take a look in the freezer to see what meats I have on hand from my monthly meat delivery from Walden Local Meat. From there I look through my Pinterest boards to see if there is anything I pinned on my “Meals I’d like to Try” board that will utilize some of the meat I have on hand and/or look at my own recipes that I haven’t tried in a while (check out my meal planning template).
Unfortunately, this week Thursday night and Friday morning things were a little crazy and I ended up making a meal plan while in the car on the way to Whole Foods. Not*at*all how I like to roll. Because of that, I’m not trying anything new and exciting this week. There was no time for perusing exciting recipes I’ve pinned with intent to try. Instead I am relying on some simple tried and true staples.
Here’s what’s cookin’:
Ground Turkey & Salsa w/ Roasted Butternut Squash (Paleo & GF): I don’t have a recipe link for this. I will simply be sautéing the ground turkey with Green Mountain Gringo salsa and serving it with roasted butternut squash. Pretty basic, but good!
Chicken w/ Pesto & Zoodles (Paleo & GF): Again, no recipe for this. I will bake chicken breasts with some light seasoning, steam some zoodles and mix them together with some pesto. BOOM!
Shrimp & Spaghetti Squash (Paleo & GF): And, finally, no recipe for this one either. I’ll sauté shrimp with Rao’s marinara and serve over spaghetti squash.
