We aren’t doing anything exciting over the break because my 16 yo has driver’s ed all week. We did go to VT for one last ski weekend through Monday though. Now we are home for the rest of the week. While there are no official school activities this week, my children’s social lives have kept me running around on top of my normal work schedule.
I have made a couple of recipes so far this week worth sharing:
http://osteriapulcinella.co.uk/menu_item/averna-2/ Shredded Chicken w/ Mexican Slaw Soft Tacos: So simple, mix shredded cabbage with a dressing of 1/2 cup salsa and 2 TBS of sour cream, add the chicken and then eat as is or wrap it up in a tortilla.
Turkey Meatloaf w/ Zucchini & Feta: The recipe calls for shredded zucchini, but I had half a bag of broccoli slaw on hand. So, I used that instead! It worked out just fine. I like this recipe a lot. The feta and the marinara topping add a great flavor.
If the girls are home for dinner tomorrow eve, I may have Thursday shrimp night. If not, I’ll be having leftovers. OK by me! 😉
