Oh, Monday, Monday… Just not as fun as Friday, Saturday and Sunday. Though I do appreciate returning to more structured eating with the macro program after a few days off.

Here’s what’s cookin’ this week:

Tuscan Pork w/ Chickpeas & Spinach (GF): I didn’t use pre-marinated lemon garlic pork they referenced in this recipe. I used sliced boneless pork loin chops and a I used a 15oz jar of Rao’s marinara.

Brussels Sprouts & Chicken Sausage Hash (GF & Paleo)

Spaghetti Squash & Beef Bake (GF): This could be Paleo if you exclude the ricotta cheese. I’ve made this before and I omitted the pine nuts and mushrooms which I will do again.

Thursday my baby is turning sweet 16 and we will be going out to dinner to celebrate. In our family it’s tradition that the birthday person gets to choose the restaurant. Sadly, she’s chosen Bertucci’s. 🙁 Teenagers…
